Abby and I were planning a fancy Sunday dinner last weekend. Here’s a hint!
AB made a roast chicken last Sunday for dinner. We had planned on roasting a chicken the week before because there was a really good deal on chickens at SFW, but the chicken I got went bad (I’ve never had that happen before in 3 days- but man that smelled rank). So, a week late, but delicious.
Abby puts potatoes, onions, carrots and rosemary in with her chicken. It’s pretty cozy in its pot!
We also made a modified version of a Rachael Ray spinach salad.
The recipe says to wilt the leaves without really sauteeing them… ours were further along the doneness scale.
Everything came together very well!
